Architect Didier Poignant's design links the historic cellars through a glass reception space. On the contemporary building, steel forms across the glass facade suggest vine stems, carrying the same regional reference into a different material. The Grand Chai des Foudres, known as the Cathedral, preserves the scale of the former storage hall. Gardens by Louis Benech soften the spaces between buildings. The nearby Monnet family mansion also houses the Monnet art gallery, with works by Emmanuel Pierre.

The hotel has 92 rooms and suites across four buildings. Deluxe Rooms measure 28 to 38 square meters and accommodate two, with double or twin beds. In contemporary Les Ceps they occupy upper floors; in historic Les Chais they have garden-level outdoor space or balconies. Premier Rooms are larger, at 39 to 47 square meters. The distinction between buildings matters as much as the category name, particularly if outdoor space is a priority. Junior Suites range from 49 to 62 square meters.

Suites measure 68 to 87 square meters, with a lounge that has its own entrance, a dressing room, and capacity for three adults. Les Chais suites retain exposed beams and have garden-level space or a terrace. At 170 square meters, the Jean Gabriel Monnet Suite adds a reception room, dining area, and cooking facilities, with access to a private treatment room. Its layout allows meals and entertaining to take place separately from the bedroom. Suite bathrooms have walk-in showers, bathtubs, and double basins.

Les Foudres is the hotel's Michelin-starred restaurant, set among the old cognac-aging barrels that give it its name. Chef Fröde Torset leads the kitchen, with pastry chef Charly Marc responsible for desserts. The cooking draws on Charente producers and regional traditions, making the restaurant a continuation of the hotel's local character. The dining room calls for elegant attire, with casual and sports clothing excluded. It is a considered evening meal in the former cellars, with a wine list selected to accompany the menu.

La Distillerie serves the more everyday side of the stay, from breakfast through lunch and dinner. Its menu follows French brasserie traditions and changes with the seasons. A terrace brings meals outdoors in suitable weather, and brunch is another part of the restaurant's program. With this restaurant on site, dining need not revolve around a long tasting menu each evening. The distinction is practical for guests dividing their time between town, business appointments, and visits to the cognac houses.

The former cooperage is now Le 1838, where cognac is central to the drinks selection. Alongside spirits from the region's houses, the bar serves signature cocktails, champagne, and tapas. Cocktail masterclasses give guests a hands-on introduction to mixing drinks. In summer, the bar service moves to the rooftop when weather permits, with views over Cognac and a terrace for pétanque.

The spa has an indoor-outdoor pool, with large windows bringing daylight into the covered area. A Jacuzzi, sauna, hammam, and experience showers provide different spaces within the wellness area, alongside four treatment rooms and a fitness room. Swimming and exercise are substantial parts of the hotel, not simply additions to a treatment menu. For guests staying through cooler weather, the covered pool area is a useful feature of this city-center address.

Treatments include body and facial care, with Kos Paris products used in the body menu. Children's treatments are available for ages three to twelve with their parents, using the Nougatine range. This is a treatment option rather than a supervised children's club. Beauty services include hairstyling and hand and foot care.

Cribs for children up to age three can be requested, subject to availability. Extra beds are possible in Junior Suites and Suites, also by request; they are not a standard feature of every room. The team can help arrange childcare through an outside provider, rather than an in-house babysitter. Three Deluxe Rooms are adapted for guests with reduced mobility, and lifts serve the facilities. These distinctions are worth settling with the hotel when selecting a room, particularly for a multigenerational stay. Pets are accepted for an additional charge.

The hotel's experience program connects a stay with the local cognac houses. Rémy Martin visits cover production and aging before a guided tasting, while Hennessy's visitor experience takes in its history on the Charente. At Les Frères Moine, the emphasis includes barrel-making and distillation, bringing the crafts behind the spirit into view. Visits are separate arrangements, with the choice of producer shaping the experience. Guided cellar tours, a tasting, and time with a cooper explore different stages of the same process rather than repeating one standard visit.

Meeting rooms and private lounges allow Chais Monnet to host business stays and celebrations as well as leisure visits. The estate has nearly 2,500 square meters of space available for private use, including a 400-square-meter ballroom. Smaller receptions can use the lounges, with food arranged by the hotel's kitchen team. This event capacity is a material part of the property, housed within the same estate as its rooms and restaurants.
