The Scally family owns Hayfield Manor, on an estate associated with the Perrott and Musgrave families. Perrotts Garden Bistro takes its name from Richard Perrott, a former resident connected with Cork's Hive Iron Works. The lobby retains a fireplace from the old manor house, while the staircase follows the original design. These details anchor the interiors in the property's history without turning the hotel into a period reconstruction. Outside, the walled garden takes inspiration from Muckross Gardens in Killarney, adding another Irish connection to the grounds.

The Library has wooden antiques, leather-studded armchairs, and shelves of books. Its French doors open onto the manor terrace, so the room has a direct relationship with the garden. A hearth gives it a different focus during colder weather. It is a small, furnished room for reading or sitting over a drink, with the proportions and familiarity of a private house.
