The buildings began as seventeenth-century wine caves, known locally as canaves. Their curved forms still shape the interiors, softened by natural tones and pale surfaces. Rather than filling the rooms with decoration, the design leaves space around the cave walls and brings the view into the living areas. Outdoor dining spaces extend the suites onto their verandas, where the caldera becomes the backdrop to a meal. This relationship between shelter and open air gives the hotel much of its character.

As the first hotel in the Canaves Collection, the property retains a small scale: its 18 suites range from open-plan spaces for two to a two-bedroom suite across two levels. The choice of layout matters here as much as the view.

The Classic Suite measures 32 square meters indoors and accommodates two. Whitewashed interiors lead to a private outdoor space with views across the caldera and sea. It is a terrace-based choice without a private plunge pool. Twin bedding is also an option in this category. A Nespresso machine and tea kettle are provided inside, and room service is available around the clock.

The Senior Suite adds indoor space, measuring 45 square meters for two. It comes with a king bed or twin beds, an outdoor patio and either an open-plan layout or a separate living room. There is also a distinct Senior Suite with Plunge Pool, at 50 square meters for up to three.

In the 55-square-meter Superior Suite With Plunge Pool, the design brings together bedroom, living and dining areas. The private veranda has space for outdoor meals and a plunge-pool Jacuzzi facing the volcano and Aegean. This category accommodates up to three. Layouts can vary between open-plan and separate living-room arrangements, and connecting rooms are available on request when reserving.

The River Pool Suite takes its name from a river-shaped plunge-pool Jacuzzi that flows onto the veranda. There is an open-air dining area beside it, with the caldera and sea beyond. Inside, the suite measures 50 square meters and accommodates two, with a king bed and a spacious bathroom with a double rain shower.

The Honeymoon Suite With Plunge Pool also measures 50 square meters for two. A king bed, a spacious bathroom with a double rain shower and a private terrace on a high level define this category. The terrace looks toward the volcano and sea, with space for sun loungers beside the pool.

The Grand Two Bedroom Suite With Plunge Pool has 85 square meters indoors and accommodates up to five. Its master bedroom sits in an open-plan loft, with the second bedroom on the lower level. Each has an en-suite bathroom with a rain shower. A separate living room provides another place to gather, while the private veranda has an outdoor plunge pool and views toward the volcano. The second bedroom can have a king bed or twin beds, and dining areas are provided both indoors and outside.

Adami sits beside the hotel's main pool, facing the caldera. Its name draws on antamoma, the Greek word for meeting, and its cooking takes inspiration from the Sunday family table. Traditional recipes connect Santorini with the Greek mainland. Lunch and dinner are served in a relaxed setting with a resort-casual dress code. The cocktail list also looks to local ingredients, keeping the drinks close to the same Greek character as the food.

The menu ranges from Santorini tomato fritters with katiki cheese to wild artichokes from Tinos with goat cheese. Pasta dishes include skioufichta with garlic and dried Mizithra, and hilopites with beef stew. Cod with skordalia and lamb kleftiko sit alongside these regional dishes. Seafood choices include grilled calamari with mavromatika beans and spinach, and shrimp pasta with cherry tomatoes and wild fennel. There are simpler plates too, including horiatiki with feta, boiled leafy greens with beetroot, and tzatziki with zucchini chips. Sfakiani pie is served with honey and sesame.

For dessert, bougatsa pairs crisp phyllo and vanilla custard with cinnamon and ice cream. Rice pudding flavored with Chios mastiha and orange blossom takes a different direction. These are examples from the current menu, which may change.

The main pool offers a place to spend time outside your suite, with Adami alongside it for a meal. In-room dining is another option, served on your private veranda.

Canaves Ena has no onsite spa. Treatments can be arranged at sister property Canaves Oia Suites, about 80 meters away. Yoga sessions are available at Ena itself. Private plunge pools can be heated, though their temperature depends on the weather.

Oia's center is a short walk away, with boutiques and places to eat among its whitewashed buildings. The hotel welcomes guests aged 13 and over. Its cliffside setting includes steps and may be difficult for guests with serious mobility limitations. Street-level suites are available, so discuss your access needs directly with the hotel. Airport and port transfers can be arranged through the concierge before arrival or departure.

For a day on the water, catamaran and yacht outings leave from Ammoudi port in Oia. These trips explore the island's coves, beaches and hot springs. On land, the concierge can arrange food and wine tours with local guides, vineyard visits or a cooking class in a local home. Guided visits to Akrotiri and the Museum of Prehistoric Thira add an archaeological focus. A local driver can also take you through Pyrgos, Megalochori and Emporio. Pottery and olive-oil tasting offer other ways to spend an afternoon. They bring a different side of Santorini into a stay otherwise framed by the caldera: its kitchens, workshops and vineyards as well as its sea views.
