Renowned Tasmanian native Chef Massimo Mele combines incredible seasonal produce and ingredients with the generosity and warmth of Italian hospitality at Peppina, The Tasman's signature restaurant. Named as a tribute to Massimo's Italian grandmother, Massimo celebrates his Italian heritage and experience to give Italian-inspired cuisine a local Tasmanian twist. An expansive light-filled atrium framed by a heritage sandstone border wall gives Peppina a strong sense of place within Hobart. The 190-seat restaurant hosts a lively open kitchen with a wood-fired oven and firepit and a separate 24-seat private dining room which takes up residence in a former State Government Survey and Lands printing room built-in 1862. Alongside Massimo, Head Chef Glenn Byrnes will present an ever-changing menu of seasonal pasta, locally sourced meats, seafood cooked on the grill, and a selection of antipasti.
Taking inspiration from Massimo's relationships with his farmers and producers, the wine list curated by Director of Food and Beverage Anthony Tran and Head Sommelier Michael Fisher will highlight wines of integrity from single-vineyard producers that focus on the quality of grapes rather than the work in the winery. While the wine list finds its spiritual home in Tasmania, the extensive range will feature benchmark wines by winemakers and grape-growers with Italian ancestry from across Australia and the many regions of Italy.

Steeped in history and stories of days gone by, the cocktail bar takes its name from the building it resides, once Australia's first private hospital, St Marys, built-in 1847. The thoughtful and carefully curated drinks offering champions the bounty that Tasmania bestows and pairs this with the finest spirits and liquors of the island. Created by a world-renowned team of Australia's most awarded bar and spirits experts, Mary Mary is led by Head Bartender Ronán Kavanagh, who brings a spirit of discovery and a deep understanding of craftsmanship in spirits. The inviting and texturally rich interior reveals the original features of this historic building, once the strongroom of the hospital, and invokes a bygone era accompanied by the lingering scent of leather and the warmth emanating from the fireplaces.
